Wild Alaska Shrimp Scampi with Asparagus
INGREDIENTS
- 8 ounces thin spaghetti or angel hair pasta
- 1 lb. large Wild Alaska Spot Prawns (shrimp) shelled
- 5 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1/4 pound asparagus trimmed and cut into 1/2 inch segments
- 4 large cloves garlic minced
- 2/3 cup tomatoes
Wild Alaska Shrimp Scampi with Asparagus

Cook time: 15 minutes
INSTRUCTIONS
Boil water and cook pasta to desired tenderness. Drain well and set aside.
In a large skillet, heat 4 tablespoons butter and 1 tablespoon olive oil over medium heat. Add asparagus, stirring frequently, and cook until crisp-tender; approximately 4-5 minutes.
Add garlic and cook for 1 minute, stirring constantly. Add the wine and cook for 1 minute, letting it reduce some.
Add tomatoes, cook for 30 seconds, continue stirring.
Add 1 tablespoon butter and 1 tablespoon olive oil to pan over medium heat. Add shrimp and cook 1 1/2-2 minutes per side or until cooked through.
Add the lemon juice and salt and pepper to taste. Combine with pasta and warm for about 1 minute. Top with fresh grated Parmesan Cheese.
